Shrimp & Avocado Pockets

Stuffed with citrusy avocado and seafood, these bread pockets are so much tastier than a regular sandwich.

Ingredients

  • 2 slices bread
  • 20 grams butter
  • 15 shrimp
  • 5 grams butter
  • 10cc white wine
  • Salt
  • Pepper
  • 1/2 avocado, diced
  • 1/4 red onion, chopped
  • 1 tablespoon mayonnaise
  • Lemon dressing:
  • 1 teaspoon olive oil
  • 2 teaspoons lemon juice
  • Salt
  • Pepper
  • Sugar
  • Chopped parsley

Steps

  1. Slice bread in half and cut a slit in the middle to make a pocket.
  2. Heat butter over medium heat in a frying pan and cook the bread on both sides until golden brown.
  3. Wipe off the pan with a paper towel. Melt some butter and add the shrimp. Cook until shrimp changes color.
  4. Add in white wine and cook until alcohol has evaporated. Season with salt and pepper to taste.
  5. In a bowl, combine cooked shrimp, diced avocado, chopped onions and mayonnaise and mix well.
  6. Fill the bread pockets with shrimp mixture and serve with lemon dressing and chopped parsley.
