Shrimp Rissoles

If you're a fan of croquettes, you'll love these crispy yet creamy shrimp-stuffed snacks.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion diced
  • 14 ounces shrimp
  • 2 tablespoons tomato paste
  • 1/2 bunch chopped parsley
  • Salt to taste
  • 1 cup water
  • 1 cup milk
  • 1.7 ounces butter
  • 3 cups flour
  • 3 1/2 ounces of requeijão
  • 3 eggs, beaten
  • Breadcrumbs for breading

Steps

  1. Saute the onion and shrimp.
  2. Add the tomato paste, parsley and salt. Reserve.
  3. In a saucepan, bring to medium heat water, milk and butter.
  4. When the butter melts, add simultaneously 2 cups of flour and stir constantly until the dough begins to unstick from the bottom of the pan. Reserve to cool until tepid.
  5. When the dough is warm, knead, adding the rest of the flour until it is smooth and elastic.
  6. Open the dough into a smooth and floured surface.
  7. Make round shapes.
  8. Fill with shrimp and add a spoonful of requeijao. Close pressing firmly.
  9. Brush with the beaten egg, cover with breadcrumbs and fry in hot oil until golden brown.
