Ingredients

Avocado Mash

  • 2 avocados
  • 2 garlic cloves, grated
  • 1 tablespoon lemon juice
  • 1 teaspoon salt

Toast

  • 2 pieces sourdough bread
  • 1 tablespoon olive oil

Tuna Salad

  • 1 can tuna
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1/2 cup chickpeas
  • 1/2 cup chopped cucumbers
  • 1 bunch dill, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon chili flakes
  • 1 tablespoon picked parsley

Steps

Avocado Mash

  1. Cut the avocados lengthwise, discard pits and remove the fruit.
  2. Mash avocado with a pastry cutter or fork until chunky.
  3. Add garlic, lemon and salt, and mix until combined.

Toast

  1. Heat olive oil in a cast-iron pan on medium-high heat. Place two slices of sourdough bread in the oil and toast both sides until golden.
  2. Set aside.

Tuna Salad

  1. In a medium bowl, shred tuna into small flaked pieces.
  2. Add olive oil and lemon juice and stir to combine.
  3. Add chickpeas, cucumbers, dill, salt and chili flakes. Mix to combine.
  4. Assemble the toast: Spread a thick layer of avocado mash on the toast.
  5. Top with chickpea and tuna salad and garnish with parsley.
