How to make Chicken with Gin Candied Orange in a skillet.

Gin-Candied Oranges

Ingredients

  • 1 large orange

  • 1 vanilla bean

  • 1/2 cup sugar

  • 2 ounces gin

  • 1 cup water

Instructions

  1. Slice the kumquats super thin and put into a pot add everything else and bring to a boil. Drop heat and let simmer for 15 minutes. Top chicken, enjoy.

Gin-Candied Oranges

Skillet Chicken

Ingredients

  • 3 pounds bone in chicken thighs

  • 1/4 pounds thyme fresh

  • 1/4 pounds marjoram fresh

  • 8 garlic cloves

  • Oil for searing thighs

  • Butter for finishing thighs

Instructions

  1. Heat a cast iron skillet to high heat and season chicken thighs with salt and pepper.

  2. Place the thighs skin-side down into the pan to sear, add herbs, stir, flip thighs, add garlic, add butter, and baste the chicken throughout then flip, continue to cook the chicken until cooked all the way through.

- Today, I'm making my candied orange chicken. Super simple dish, pretty fast. All right, first, I start with skin-on chicken thigh. Gonna season with salt and pepper. All right, so I have a cast-iron pan over here, nice and hot. Gonna add my oil. I wanna add my chicken in, skin side down. All right, so right now I just wanna get my skin nice and crispy, and I'll flip it over and add my herbs. Then we'll take some garlic cloves and just crush 'em, and throw 'em right in. All right, so while my chicken's finishing up, all right, I got my pot. Gonna add my water. I have some vanilla right here. Just gonna take this whole bean, split it down the center, throw it right in. And I have sugar, and a little bit of gin. Why? 'Cause why not. Take this mandolin. Do some thin slices. I'm just gonna put this right in the pot. Okay, now, this is gonna come up to a simmer. And once it does, that's when the candying process starts. Then, it's gonna be about 15 minutes and it's done. After that, I'm gonna transfer it over to a rack. Let it cool down. Sprinkle it with more sugar. All right, so now my oranges look nice and done. Translucent, you can see straight through these guys right here. Transfer 'em over to a tray. All right, so my oranges have candied up nicely. My chicken's done perfectly. Lots of herbs, lots of smells coming out of this pan. So, now I'm just gonna layer my candied oranges right on top of this chicken, right in the pan I cooked it in. And, now I'm just gonna take some of this liquid that we used to candy the oranges, some of that gin, sugar, the vanilla, and just drizzle it right over top of the chicken. All right, so there you have it. A very simple dish. Savory, sweet, everything you need. Enjoy.
