This chocolate chip skillet cookie is incredibly gooey and packed with chocolate chips. Finished with home-made fudge sauce and a generous scoop of ice cream.

Ingredients

Cookie

  • 2 tablespoons unsalted butter melted and slightly cooled
  • 1 large egg yolk
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/8 teaspoon baking powder
  • pinch salt
  • 1/3 cup semisweet chocolate chips

Fudge Sauce

  • 1 tablespoon unsalted butter
  • 1 ½ tablespoons heavy whipping cream divided
  • 1 tablespoon brown sugar
  • 1/4 teaspoon vanilla extract
  • 3 tablespoons chopped semisweet chocolate I used chocolate chips
  • 1 large scoop ice cream of choice for serving

Steps

Cookie

  1. Preheat your oven to 350F. Add the melted butter, egg yolk, brown sugar and vanilla extract to a medium sized mixing bowl. Mix until well combined. Add the flour, baking powder and salt and mix using a spatula until well combined. Add the batter to a 6-inch cast iron skillet and spread around evenly using a spoon. Sprinkle with chocolate chips and bake for 15 minutes. Allow to cool for 5 minutes before serving.

Fudge Sauce

  1. Add all the ingredients into a small heat proof bowl and microwave for 30 seconds. Mix using a spoon until smooth.
  2. Drizzle sauce on top of the cookie and add a scoop of vanilla ice cream.
