Skinny Frappuccino Popsicles

Ingredients

  • 2 cups strong brewed coffee, chilled
  • 1 can full-fat coconut milk, at room temperature, divided
  • 1 tablespoon dark cocoa powder
  • 2 teaspoons vanilla extract, divided
  • 4 tablespoons pure maple syrup, divided

Steps

  1. In a blender, combine the coffee, all but 1/3 cup of the coconut milk, cocoa powder, 1 1/2 teaspoons vanilla extract, and 2 tablespoons maple syrup. Puree until smooth.
  2. Pour the coffee mixture into a popsicle mold about 2/3 of the way up, leaving space for the cream later.
  3. Place in the freezer and freeze for one hour.
  4. While in the freezer, make the cream. In a small mixing bowl, combine the remaining 1/3 cup coconut milk with remaining 1 tablespoon pure maple syrup.
  5. Add the popsicle sticks to the molds once the mixture has solidified enough and top with the cream mixture. Place back in the freezer and freeze until solid, about 4-6 hours.
