Skinny Frappuccino Popsicles

Ingredients
- 2 cups strong brewed coffee, chilled
- 1 can full-fat coconut milk, at room temperature, divided
- 1 tablespoon dark cocoa powder
- 2 teaspoons vanilla extract, divided
- 4 tablespoons pure maple syrup, divided
Steps
- In a blender, combine the coffee, all but 1/3 cup of the coconut milk, cocoa powder, 1 1/2 teaspoons vanilla extract, and 2 tablespoons maple syrup. Puree until smooth.
- Pour the coffee mixture into a popsicle mold about 2/3 of the way up, leaving space for the cream later.
- Place in the freezer and freeze for one hour.
- While in the freezer, make the cream. In a small mixing bowl, combine the remaining 1/3 cup coconut milk with remaining 1 tablespoon pure maple syrup.
- Add the popsicle sticks to the molds once the mixture has solidified enough and top with the cream mixture. Place back in the freezer and freeze until solid, about 4-6 hours.
