Slow Cooker Garlic & Chive Mashed Potatoes

These super easy mashed potatoes guarantee your holiday dinner will be stress-free.

Ingredients

  • 1 1/2 pounds (4-6) red potatoes, quartered
  • 1/2 cup unsweetened almond milk
  • 1/2 cup low sodium chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup plain greek yogurt
  • 1/4 parmesan cheese, grated
  • 1/2 teaspoon sea salt
  • 2 tablespoon fresh chives, plus more for garnish

Steps

  1. Place the potatoes, almond milk, chicken broth, and garlic in a slow cooker.
  2. Cover and cook for 3-4 hours on high or 6-8 hours on low.
  3. When the potatoes are very tender, mash using a potato masher or fork directly in the bowl of the slow cooker to your desired consistency.
  4. Stir in the plain greek yogurt, chives, parmesan, and sea salt. Cover and heat through for an additional 15-20 minutes.
  5. Taste and adjust seasoning, if desired.
