The smiley potato fries of your childhood just got a little sweeter.

Ingredients

Smiley Daigaku Imo Potatoes

  • 400 grams sweet potatoes
  • 50 grams potato starch
  • 50 grams sugar
  • 50 grams milk

Sauce

  • 50 grams sugar
  • 5 tablespoons mirin
  • 2 tablespoons soy sauce

Steps

Smiley Daigaku Imo Potatoes

  1. Slice sweet potatoes and boil them until tender. Once they are done, peel off the skin.
  2. Mash with a fork and add in potato starch, sugar and milk and mix until combined.
  3. Mold and shape into small round discs.
  4. Using a toothpick and spoon, make smiley faces on the potatoes.
  5. Cook in hot oil until crispy and golden brown.
  6. Add the fried potatoes into the sauce and mix to coat.
  7. Serve with a sprinkling of black sesame seeds.

Sauce

  1. In a separate pan, combine sugar, mirin and soy sauce to make the sauce. Simmer for a few minutes.
