Smiley Daigaku Imo Potatoes

The smiley potato fries of your childhood just got a little sweeter.


  • 400 grams sweet potatoes
  • 50 grams potato starch
  • 50 grams sugar
  • 50 grams milk
  • Sauce:
  • 50 grams sugar
  • 5 tablespoons mirin
  • 2 tablespoons soy sauce


  1. Slice sweet potatoes and boil them until tender. Once they are done, peel off the skin.
  2. Mash with a fork and add in potato starch, sugar and milk and mix until combined.
  3. Mold and shape into small round discs.
  4. Using a toothpick and spoon, make smiley faces on the potatoes.
  5. Cook in hot oil until crispy and golden brown.
  6. In a separate pan, combine sugar, mirin and soy sauce to make the sauce. Simmer for a few minutes. Then add in the fried potatoes and mix to coat.
  7. Serve with a sprinkling of black sesame seeds.
