• 2 racks pork ribs, membrane removed
  • 1 bottle of beer
  • Applewood chips
  • 3/4 cup brown sugar
  • 1 tablespoon ground coffee
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon salt
  • 1 tablespoon pepper


  1. Make the smoker pan and grill: Soak 4 cups applewood chips in beer.
  2. Remove chips from beer and place in an aluminum pan.
  3. Cover pan with aluminum foil and poke several holes with a skewer.
  4. Turn the gas grill on and place the pan over a low flame. Chips should start to smoke within 10 minutes.
  5. Make the rub: In a small bowl, combine brown sugar, paprika, cumin, chili powder, garlic powder, ground coffee, salt, and pepper.
  6. Allow ribs to rest at room temperature for 20 to 25 minutes and then cover with prepared rub.
  7. Place ribs on gas grill opposite the smoke pan and cook slowly for 2 to 3 hours or until the internal temperature is at least 145 degrees. Ribs will become super tender at 180 degrees and up.
  8. Serve with barbecue sauce.
