S'mores Bars

Ingredients

  • 1 tablespoon coconut vinegar or apple cider vinegar

  • 1 teaspoon baking soda

  • 1 cup Nabisco plain graham crackers, crushed

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 cup vegan butter, melted

  • 1 cup brown sugar

  • 1 cup vegan semi-sweet chocolate chips

  • 1 cup vegan marshmallows, torn in half

Instructions

  1. Preheat oven to 350°F. Spray a 9x9 baking pan with nonstick spray and line with parchment paper.

  2. In a small bowl, stir together the vinegar and baking soda with a fork until baking soda is dissolved. Set aside.

  3. In a medium bowl, stir together the graham cracker crumbs, flour, and baking powder.

  4. Using an electric mixer, cream together the butter and sugar on medium speed until light and fluffy.

  5. Add the vinegar and baking soda mixture to the butter, and beat on high until the vinegar is fully incorporated, about 2 minutes.

  6. Slowly add in the dry ingredients on medium speed, and beat until it looks like cookie dough.

  7. Reserve 1/4 of the dough and set aside; you'll use this later for the topping. Press the remaining dough into the baking pan.

  8. Sprinkle chocolate chips and marshmallows evenly onto the cookie dough layer.

  9. Use reserved cookie dough to scatter grape-sized pieces over the marshmallows and chocolate chips.

  10. Bake for 15-25 minutes or until golden brown. Place on cooling rack; serve warm.

- Hey guys, I'm gonna make some S'mores Bars today. And these S'mores Bars don't require a campfire, all they require is your oven and your taste buds. So let me show you how to make them. For the S'mores Bars, I start by mixing together the vinegar and baking soda, and that's what I use to substitute the egg in this recipe. You could even see it kinda fizz. It's really cool, it's like a science experiment in a way. So I just use a fork to mix it together until the baking soda disappears into the vinegar. It's like magic. And this is a really good binding substitute for the cookie crust. And so now I'm gonna mix together the flour and then the graham cracker crumbs and then the baking powder. And then just give it a good whisking until the crumbs are nice and incorporated into the flour. And now I'm gonna mix together the vegan butter with the brown sugar and start on slow. You want to mix this together until the sugar is more incorporated into the butter and not so grainy. Alright, I'm gonna add in the egg substitute which is the vinegar and baking soda mixture. So just like you would with an egg you're gonna mix this in. Mix until it's nice and fluffy. This looks perfect. So now what I'm basically making is a cookie dough that'll be the base of these S'mores Bars and way more delicious than your average just graham cracker layer. I love this snack because I always feel like normal s'mores are almost too heavy on the marshmallow so all of the goodness of the chocolate and the graham cracker just gets swallowed up into the marshmallow. And this is a perfect balance of everything. Alright, so I like to use my hands at this point just to make sure that the cookie dough is nice and together 'cause you're gonna reserve about a quarter of this mixture and use it later on for the topping of the S'mores Bars. Just get a small bowl and scoop a good amount of this dough. So make sure to reserve enough of the dough so that it'll cover the surface of the pan that you're using. Now I'm gonna coat the bottom of this pan with the graham cracker cookie crust. So now you just wanna press the crust into the corners and just throughout this pan. That looks perfect. Next thing you wanna do is use vegan marshmallows and top off the graham cracker cookie crust. I like to split them in half, that way they bake a lot more evenly and that way it also ensures that you have a marshmallow bite in every little square. Alright, so now that that's covered, I'm gonna top it with semi-sweet chocolate chips. So you can kinda just sprinkle them over. Just make sure to cover the surface really well. And now I'm gonna use the remaining cookie dough that I saved and I'm gonna cover the top of the marshmallows and the chocolate chips nice and evenly, yum. And then I'm gonna pop these in the oven for about 20 minutes at 350 degrees. Now that the S'mores Bars are out of the oven, I let them cool for a few minutes. And now it's time to slice them. So I'm just gonna take them out of the pan and slice myself a square. Just dig right in. No marshmallow that's gonna burn your hand. Mmm, I love not camping. I have actually never been camping so I've created this bar as a way to relate to those campfire people. Wait, what?
