Oven-Baked S'mores Bars
No campfire required for these marshmallow and chocolate vegan delights.
Ingredients
- 1 tablespoon coconut vinegar or apple cider vinegar
- 1 teaspoon baking soda
- 1 cup Nabisco plain graham crackers, crushed
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup vegan butter, melted
- 1 cup brown sugar
- 1 cup vegan semi-sweet chocolate chips
- 1 cup vegan marshmallows, torn in half
Steps
- Preheat oven to 350°F.
- Spray a 9x9 baking pan with nonstick spray and line with parchment paper.
- In a small bowl, stir together the vinegar and baking soda with a fork until baking soda is dissolved. Set aside.
- In a medium bowl, stir together the graham cracker crumbs, flour, and baking powder.
- Using an electric mixer, cream together the butter and sugar on medium speed until light and fluffy.
- Add the vinegar and baking soda mixture to the butter, and beat on high until the vinegar is fully incorporated, about 2 minutes.
- Slowly add in the dry ingredients on medium speed, and beat until it looks like cookie dough.
- Reserve 1/4 of the dough and set aside; you'll use this later for the topping. Press the remaining dough into the baking pan.
- Sprinkle chocolate chips and marshmallows evenly onto the cookie dough layer.
- Use reserved cookie dough to scatter grape-sized pieces over the marshmallows and chocolate chips.
- Bake for 15-25 minutes or until golden brown.
- Place on cooling rack; serve warm.
