S’mores Cookie Sandwiches

Bring camping to the kitchen with chocolate and toasted marshmallows between two peanut butter cookies.

Ingredients

  • 1 cup peanut butter
  • 1 cup coconut sugar
  • 2 teaspoons vanilla extract
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1/4 cup almond milk
  • 1 bag of marshmallows
  • 2 to 3 large chocolate bars

Steps

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream together peanut butter and coconut sugar for 1 minute. Add the vanilla extract and mix for another 30 seconds.
  3. Add oat flour and baking soda and continue to mix until crumbly. Add almond milk, a little at a time, until mixture comes together. Do not over-mix.
  4. Roll dough into tablespoon-sized balls and flatten between hands. Place cookies on a parchment paper-lined cookie sheet, and bake for 9 to 11 minutes.
  5. While cookies are cooling slightly, torch marshmallows over a flame on the stove.
  6. Sandwich a toasted marshmallow (or 2) and a square of chocolate between 2 cookies. Enjoy!
