Somen Noodle and Pumpkin Mochi Dumplings

Ingredients

  • 2 bundles somen noodles

  • 3 ounces pumpkin paste

  • 1/3 cup potato starch

  • 1 1/2 tablespoons sugar

  • Red bean paste

  • Brown sugar syrup

  • Roasted soy flour

Instructions

  1. Boil the somen noodles. Add to a mixing bowl along with potato starch, pumpkin paste and sugar. Stir to combine into a dough. Form dough into balls and fill with red bean paste.

  2. Place three balls on a skewer. Boil skewers for approximately 3 minutes.

  3. Finish by topping with brown sugar syrup and roasted soy flour.
