Spicy Mango Summer Rolls

Ingredients

  • 1/3 cup apple cider vinegar

  • Juice of 1 lime

  • 1 to 2 tablespoons Tajin (depending desired spice level), plus more for sprinkling

  • 6 spring roll rice paper wrappers

  • 1 cup thinly shredded iceberg lettuce

  • 1 large mango, cut into spears (about 1 cup)

  • Cucumber spears or thinly sliced carrots, optional

Instructions

  1. In a shallow tray or plate, combine the apple cider vinegar, lime juice and Tajin. Dip the rice paper wrappers into the liquid, and move around, allowing them soak up the liquid until they begin to soften, about 30 seconds.

  2. Transfer the papers to a flat, clean work surface. Place a handful of the shredded lettuce toward the bottom of a paper, followed by some of the mango spears and veggies if desired. Fold the edge of the paper up over the mango, pulling tightly, roll it forward, then fold the sides in over the top, and continue to push forward to close the roll. Sprinkle with more Tajin if you like. Repeat with remaining wrappers and ingredients. Serve.

- Today I'm making summer rolls, but I'm stuffing them with my tropical fruit, mango. And I'm spicing it up with some tahini. It's a crazy combo, but you'll be surprised how much you love it. Let's get started. So I'm get my mango cut into spears. So that it can go perfectly inside of my summer roll. Just gonna try and miss that core, cut around it. On edges. And this you can save for sucking on later. But we're just gonna cut these guys into long strips. And then I can chop up my lettuce. I like using iceberg lettuce because it just gives a really nice refreshing crunch. Once all my vegetables are chopped, I have iceberg here, I have my mangoes, I have some julienned carrots and some spears of cucumber. I'm gonna get started on my wrapper. These are just rice paper wrappers. I have a plate with a little lip on it because I'm gonna add in some liquid. I have some apple cider vinegar and some lime juice. And then I'm adding this tahini. And I'm just gonna add that right into this plate with all of that lemon juice and vinegar. I like mine kind of spicy. And I also like how it changes the color of my rice paper. All right, so we're just gonna dunk our rice paper into this liquid and I think this is a better alternative than water just cause it has so much flavor already. So you don't have to soak that for too long. Just enough until it starts to wrinkle a little bit. And as it sits, it'll keep absorbing that liquid. At this stage, we can start filling it. So I have some of my shredded lettuce. Mango, some carrot. And if you wanna chop your cucumber in half so that it fits nicely in there, that's perfect. Get this as full as you can roll it. I'm folding over these edges first. And then kind of just pulling in all of that filling towards me. Just pinching as tight as I can as I go forward. There you have it. It's the most easy summer roll that I've ever made. It's filled with mango, spices, lime, everything is right inside of this. You don't need a vinaigrette. You need to go and make it cause I know that you're gonna love it.
