Ingredients

Spicy Turkish Hamburger

  • 8 tortillas
  • ½ red leaf lettuce
  • Vegetable oil, as needed

A

  • 400g ground beef
  • ½ large onions
  • 2 cloves garlic
  • 30g bread crumbs
  • 1 egg
  • 5 Italian parsley stems
  • 1 tbsp potato starch
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil

B

  • 2 tsp paprika
  • ½ tsp cinnamon powder
  • 2 tsp nutmeg powder
  • 2 tsp chili powder
  • 2 tsp cumin powder
  • 2 tsp black pepper
  • 1 tsp Salt

Red Cabbage Marinade

  • ⅛ red cabbage
  • Salt, as needed
  • ¼ lemon juice

Yukari (dried shiso leaves) Onion

  • ½ onion
  • 1 tsp yukari

Garnish

  • Mini tomatoes, as needed
  • ¼ lemon

Steps

Spicy Turkish Hamburger

  1. Grate the onion and garlic cloves from A.
  2. Take the leaves off of Italian parsley and mince.
  3. Shred red leaf lettuce.
  4. Shred red cabbage and sprinkle with salt and lemon juice to make red cabbage marinade.
  5. Shred onions and combine with yukari (dried shiso leaves) to make Yukari Onions.
  6. Grind and mix the ingredients for B.
  7. In a bowl, combine together B and the ingredients for A.
  8. Divide into 8 equal parts and form into logs. Heat vegetable oil in a frying pan and cook both sides until brown.
  9. After the meat is cooked through completely, use a well-heated iron stick to make grill marks on the meat.
  10. Assemble the tortilla. Place shredded red leaf lettuce, red cabbage marinade, yukari onion, meat and wrap.
  11. Serve on a plate with a squeeze of lemon wedge and cherry tomatoes on the side.
