SPLENDA® Charred Lemon-Thyme Cookies

You've never tasted citrusy cookies as flavorful as these before.


  • 1 lemon, cut in half
  • 1/2 cup butter, softened to room temperature
  • 6 packets of SPLENDA® Naturals Stevia Sweetener
  • 1/4 cup SPLENDA® Brown Sugar Blend
  • 2 cups all-purpose flour
  • 1 tablespoon freshly picked thyme
  • 1/4 teaspoon salt
  • Flour for dusting
  • Charred lemon icing:
  • 6 packets SPLENDA® Naturals Stevia Sweetener
  • 2 teaspoons cornstarch
  • 1 lemon, cut in half


  1. Preheat oven to 300°F, and prepare a baking sheet with parchment paper.
  2. Heat a cast-iron skillet over medium-high heat. Arrange both halved lemons in pan, cut side down. Cook 3 to 4 minutes or until cut side of lemon is charred. (Reserve one lemon for icing.)
  3. Using a hand mixer, beat butter on high until smooth. Gradually add 6 packets of SPLENDA® Naturals Stevia Sweetener and SPLENDA® Brown Sugar Blend until incorporated. Add remaining ingredients, mixing to incorporate, scraping down the sides of the bowl as you go. Squeeze in juice from 1 charred lemon and mix again.
  4. Wrap dough in plastic wrap and refrigerate until firm enough to roll out (10-15 minutes).
  5. Dust work surface with flour and roll out dough 1/4-inch thick. Cut out 2-inch circles, re-rolling dough as needed to form more cookies.
  6. Place on prepared baking sheet and bake for 15-20 minutes, or until cookies begin to turn golden but still pale in color. Let cool.
  7. Prepare the icing. Place 6 packets of SPLENDA® Naturals Stevia Sweetener and cornstarch in a spice grinder and blend on high until powdery in consistency. Add juice from the other lemon, and blend again until smooth and liquefied.
  8. Drizzle cookies with icing and enjoy!
