Sponge Toffee

Think, caramel crunch spooning a smooth dark chocolate shell... now we're talking.

Ingredients

  • 1 1/4 cups sugar
  • 1/4 cup of water
  • 1/3 cup white corn syrup
  • 1 teaspoon vanilla
  • 2 teaspoons baking soda
  • 4 ounces Melted dark chocolate

Steps

  1. Cover a 9' by 5' pan with parchment paper.
  2. Bring sugar, corn syrup and water to boil. Stir until sugar is dissolved. Then don't stir and brush down the sides with water.
  3. Cook until 1 teaspoon of the mixture dropped in cold-water forms hard brittle threads. (5-7 minutes) or until mixture reaches 300˚F on a candy thermometer. It should be a light caramel colour.
  4. Remove from heat and pour in vanilla. Add baking soda and whisk until just combined, 2 to 3 times. Pour the mixture into a loaf pan.
  5. Let cool for 2 hours undisturbed and then cut the toffee into bite sized pieces and dip one end in melted chocolate.
