Deep-Fried Curry Spring Roll

Adding a fried egg to anything is bomb, but stuff it in a spring roll filled with ground beef and you have an instant win.

Ingredients

Spring Roll Wrapper Curry Bread

  • 3 eggs
  • 3 slices sandwich bread, sliced in half with crusts cut off
  • 3 spring roll wrappers
  • Flour
  • Panko bread crumbs
  • Vegetable oil

Curry Filling

  • 100 grams ground beef or pork
  • 1/4 onion. chopped
  • 1/6 carrot, chopped
  • 1 teaspoon curry powder
  • 1 teaspoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 2 teaspoons flour mixed with 100 milliliters water

Steps

Spring Roll Wrapper Curry Bread

  1. Cook the eggs in a frying pan until half runny.
  2. Place curry filling onto bread. Top one side with a fried egg and place the other bread on top.
  3. Place the entire sandwich onto a spring roll wrapper. Roll it up tightly and dip into the flour/water mixture.
  4. Finally, coat with panko bread crumbs.
  5. Cook for 3 minutes in hot oil at 180 degrees C. Once it's crispy and golden brown, drain on paper towels.

Curry Filling

  1. Cook ground meat, onions and carrots until onions are translucent.
  2. Add in the rest of the ingredients for the curry filling and cook until you get a nice slightly thick curry paste.
