Stained Glass Cake

This stained glass cake takes decorating to the next level.


  • Bubble wrap
  • 1 plain sponge cake
  • Blueberry jelly:
  • 2 tablespoons water
  • 1 tablespoon gelatin
  • 1/2 cup blueberry jam
  • 1/4 cup water
  • Yogurt mousse:
  • 1 tablespoon gelatin
  • 3/4 cup water
  • 9 ounces strained yogurt
  • 1/2 cup sugar
  • 2 cups whipped cream
  • Topping:
  • Blueberry jam
  • Apple jam
  • Strawberry jam


  1. For the blueberry jelly: In a small bowl, combine water and gelatin. Transfer to a mixing bowl along with blueberry jam and 1/4 cup water. Stir to combine. Pour into a 4-inch cake pan and place in fridge until firm.
  2. For the yogurt mousse: In a small bowl, combine gelatin and water. Transfer to a mixing bowl along with yogurt and sugar. Whisk to combine then fold in whipped cream.
  3. Place the sponge layer in the 6-inch cake pan and pour two-thirds of the yogurt mousse over the top. Place the chilled, firm blueberry jelly in the center and pour remaining yogurt mousse over the top.
  4. Cut a circle in the bubble wrap the same size of the cake pan and place on top. Chill in fridge for 1 hour, or until firm. Remove it from the pan, and remove the bubble wrap.
  5. Pipe colored jam in the dents.
