Ingredients

Blueberry Jelly

  • 2 tablespoons water
  • 1 tablespoon gelatin
  • 1/2 cup blueberry jam
  • 1/4 cup water

Yogurt Mousse

  • 1 tablespoon gelatin
  • 3/4 cup water
  • 9 ounces strained yogurt
  • 1/2 cup sugar
  • 2 cups whipped cream
  • 1 plain sponge cake

Stained Glass Topping

  • Bubble wrap
  • Blueberry jam
  • Apple jam
  • Strawberry jam

Steps

Blueberry Jelly

  1. In a small bowl, combine water and gelatin. Transfer to a mixing bowl along with blueberry jam and 1/4 cup water. Stir to combine.
  2. Pour into a 4-inch cake pan and place in fridge until firm.

Yogurt Mousse

  1. In a small bowl, combine gelatin and water. Transfer to a mixing bowl along with yogurt and sugar. Whisk to combine then fold in whipped cream.
  2. Place the sponge layer in the 6-inch cake pan and pour two-thirds of the yogurt mousse over the top.
  3. Place the chilled, firm blueberry jelly in the center and pour remaining yogurt mousse over the top.

Stained Glass Topping

  1. Cut a circle in the bubble wrap the same size of the cake pan and place on top. Chill in fridge for 1 hour, or until firm.
  2. Remove it from the pan, and remove the bubble wrap.
  3. Pipe colored jam in the dents.
