Starbucks Copycat Ginger Molasses Cookies

These chewy gingery cookies taste just like Starbucks, but you get to stay at home!


  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 tsp ground ginger
  • ¾ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¾ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp water
  • ¼ cup molasses
  • 2 tbsp granulated sugar


  1. Combine the flour, baking soda, salt, ginger, cinnamon and cloves.
  2. In a separate bowl, beat the butter and 1 cup granulated sugar with an electric mixer until smooth. Add the egg, water and molasses. Gradually add the flour mixture and mix until combined.
  3. Roll the dough into walnut-sized balls and roll them in the 2 tbsp granulated sugar. Place on a baking sheet lined with parchment paper and slightly flatten.
  4. Bake at 350F for 8-10 minutes. Cool on the pan for 5 minutes, then transfer to a wire rack and cool completely. Enjoy!
