• 2 pounds skirt steak, thinly sliced
  • 2 tablespoons cumin
  • 2 tablespoons paprika
  • 1 tablespoon salt
  • 2 tablespoons garlic powder
  • 1 tablespoon dried oregano
  • 1/2 orange juice
  • 1/4 cup lime juice
  • 2 large onions, one thinly sliced and one whole
  • 2 bell peppers, thinly sliced
  • 2 red bell peppers, thinly sliced
  • 2 tablespoons olive oil
  • Tortillas, warm
  • Cilantro
  • Lime wedges


  1. Preheat oven to 425 degrees.
  2. In a large bowl, add steak, cumin, paprika, salt, garlic powder and dried oregano. Pour in orange juice and lime juice.
  3. Massage onto steak until coated. Set aside.
  4. Cut onion in half and place one side down in the center of a rimmed baking sheet. Place a large bamboo skewer in the center of the onion.
  5. Layer the steak up the skewer and top with remaining half of onion. Lay out sliced onion and peppers on the baking sheet and drizzle with olive oil.
  6. Bake 35 to 40 minutes or until cooked through.
  7. Remove from oven and slice off meat. Add meat to a warmed tortilla.
  8. Top with peppers and onions and garnish with cilantro and fresh lime juice.
