Strawberry Bubblegum Eton Mess

This gloriously saucy "mess" is whipped cream with homemade strawberry sauce and bubblegum meringues!


  • Bubblegum Meringues
  • 2 egg whites
  • 110g caster sugar
  • 1/2 tsp cream of tartar
  • 1 tsp of vanilla
  • 1 tsp bubblegum essence
  • 2 drops blue food gel
  • pink caviar sprinkles
  • 300ml thickened whipped cream
  • 1 tsp vanilla extract
  • Strawberry sauce
  • 300g strawberries, tops cut off, cleaned a dried + 4 strawberries to decorate
  • 300g white sugar
  • 1 tsp lemon juice (optional)


  1. Bubblegum Meringues
  2. Preheat the oven to 100C (200F). If your oven doesn’t go as low as 100C (200F) set it to the lowest temp and bake for a shorter amount of time. The closer it is to 100C  the better as any temperature higher than that will result in a chewy meringue cookie. Line a flat baking tray with baking paper.
  3. Whip the egg whites and cream of tartar on high speed with an electric mixer until stiff peaks form.
  4. Gradually, and very slowly, add the sugar (about 1 tbsp at a time), while continuing to whip on medium high speed. Once all the sugar is in add the bubblegum essence and blue food gel. Continue whipping for 5-6 min or until you reach stiff peaks. If you can turn the bowl upside down and no meringue falls out, you know it’s done.
  5. Dab a little of the meringue on the corners of your baking tray and stick your baking paper to it. This will prevent it from flying around in the oven. Fit the end of your piping bag with a round tip, and pipe the meringues as instructed in the video. Sprinkle with pink sprinkles
  6. Bake the meringues for 90 min. DO NOT open the oven door at any point as cool air will cause them to crack. once they’re done, turn the oven off and leave them in the oven to cool completely.
  7. To whip cream
  8. Add cream and vanilla extract into a large mixing bowl and whip to stiff peaks using a hand mixer. Set aside
  9. Strawberry sauce
  10. Add cleaned strawberries into a food processor. Blitz to a liquid on high speed. Add sugar and mix until well combined. Add to a large microwave safe bowl. Cover with food grade, microwave safe, plastic wrap. Poke 4 holes in the plastic with a sharp knife for the steam to escape and microwave for 5 minutes. Stir, and microwave for another 5 minutes. Mixture should thicken slightly. Allow to cool completely. Alternatively you can use store bought strawberry sauce.
  11. To assemble eaton mess, add cream at the bottom of a serving glass, followed by crushed bubblegum meringues and a drizzle of strawberry sauce. Repeat until you get to the top and finish off with some whole meringues and a strawberry to decorate.
  12. Serve fresh.
