If you can't decide between fruity cheesecake or a creamsicle, now you can have both in one sweet frozen treat.
1 1/3 cups cream cheese
3/4 cup heavy cream
1/2 cup sugar
1/2 cup strawberries, chopped
1 tablespoon lime juice
1/2 cup strawberry jam
1 cup shortbread cookies or graham crackers, crushed
In the food processor, blend the cream cheese, cream, sugar, strawberries and lime juice.
Place in Mexican popsicle molds, fasten the lids and place in the freezer for 1 hour, or until firm.
Remove the lids, fill the popsicles with the strawberry jam, insert the popsicle sticks and pour on a thin layer of the strawberry cream cheese mixture.
Finish with the crushed cookies and place in the freezer for at least 2 hours.
