Strawberry-Shaped Macarons

Ingredients

Strawberry-Shaped Macarons

  • Green icing
  • 100g almond powder
  • 100g powdered sugar
  • 1/2 egg whites
  • Red food coloring
  • 1 tbsp cocoa powder
  • White icing
  • Custard cream, as needed
  • Strawberry jam, as needed

Merengue

  • 1/2 egg whites
  • 25ml water
  • 100g granulated sugar

Steps

Strawberry-Shaped Macarons

  1. Pipe out the green icing into the shape of a strawberry top. Let sit until hardened.
  2. In a bowl, combine almond powder, powdered sugar, egg whites, food coloring and cocoa powder and mix with a rubber spatula.
  3. Add half of the merengue and gently fold in with a rubber spatula. Repeat the same process with the other half of the merengue.
  4. When the batter reaches lava stage and ribbons as it flows off the spatula, transfer to a piping bag and pipe in strawberry-shaped patterns.
  5. Let rest at room temperature for about 1 hour or until the surface dries completely.
  6. Bake for about 15 minutes at 160°C.
  7. Once cool, flip over the macaron and pipe the custard cream and strawberry jam onto the surface.
  8. Close with another macaron.
  9. Pipe the white icing in the shape of strawberry seeds and attach the strawberry top (green icing). Enjoy!

Merengue

  1. To make the merengue, whisk egg whites with a mixer until foamy.
  2. In a small pot, combine granulated sugar and water and raise the temperature to 118°C over low heat.
  3. Return to the foamy egg whites and add the sugar mixture in small additions.
  4. Whisk until shiny and firm peaks form.
