Ingredients
- 6 ripe peaches
- 2 pounds tomatoes
- 3 tablespoons sherry vinegar
- 2 tablespoons lemon juice
- 1 shallot, halved
- 2 cloves garlic
- 2 tablespoons sour cream
- 1 tablespoon fresh basil, plus more for garnish
- 1 teaspoon salt
- 1 teaspoon pepper
- Goat cheese, for garnish
Steps
- Preheat oven to 350 degrees.
- Halve the peaches and tomatoes and roast until tender, about 15 minutes. In a blender, combine all ingredients except for goat cheese and blend until smooth. Refrigerate until chilled, then top with goat cheese and basil.
