Peach Tomato Gazpacho

Ingredients

  • 6 ripe peaches
  • 2 pounds tomatoes
  • 3 tablespoons sherry vinegar
  • 2 tablespoons lemon juice
  • 1 shallot, halved
  • 2 cloves garlic
  • 2 tablespoons sour cream
  • 1 tablespoon fresh basil, plus more for garnish
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Goat cheese, for garnish

Steps

  1. Preheat oven to 350 degrees.
  2. Halve the peaches and tomatoes and roast until tender, about 15 minutes. In a blender, combine all ingredients except for goat cheese and blend until smooth. Refrigerate until chilled, then top with goat cheese and basil.
