Sushi Latkes With Truffle Teriyaki Sauce

Express your love of sushi in a whole new way with these rice latkes.

Ingredients

Latkes

  • 2 cups sushi rice, cooked
  • 1/4 cup shredded carrots
  • 2 tablespoons minced ginger/garlic mix
  • 1/4 cup rice wine vinegar
  • 2 tablespoons soy sauce
  • 1 egg
  • 2 teaspoons salt
  • 4 tablespoons flour
  • 5 scallions, thinly sliced
  • 1 piece toasted nori (seaweed), chopped or shredded
  • Oil for frying

Truffle Teriyaki Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon truffle oil
  • Optional toppings: sliced scallions, ginger, avocado, smoked salmon/lox

Steps

Latkes

  1. Prepare rice according to package instructions.
  2. Mix in the carrots, ginger/garlic mix, rice wine vinegar, soy sauce, egg, salt, and flour, stirring to combine.
  3. Add the scallions and chopped nori and mix well, mushing rice slightly with the back of your spoon.
  4. Heat a non-stick pan with 3-4 tablespoons of olive oil on medium-high heat.
  5. Fill an ice cream scoop with the mixture, packing it tightly, and place mounds into the pan, pressing down slightly to form a patty.
  6. Fry until deeply golden brown, 4-5 minutes.
  7. Flip and fry on the other side until golden and cooked through. Continue with remaining rice.
  8. While latkes are cooking, make the sauce.

Truffle Teriyaki Sauce

  1. Mix together the mayonnaise, teriyaki sauce and truffle oil. Reserve.
  2. Remove latkes to a plate lined with paper towels.
  3. Serve immediately with truffle teriyaki sauce and toppings.
