If your brunch doesn't have these sweet berry rolls, is it even brunch?
1 frozen loaf of ready dough
1/2 cup raspberries
1/2 cup blueberries
1/2 cup chopped strawberries
1/2 cup white sugar
2 tablespoons cornstarch
Cream cheese frosting:
1/4 cup butter, cubed
4 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla
1 teaspoon lemon juice
1/2 cup brown sugar
1/4 cup butter, melted
Preheat oven to 350 degrees.
In a greased loaf pan, allow the bread to rise for 1 to 2 hours.
In a medium bowl, mix berries, sugar and cornstarch. Set aside.
Cream butter and cream cheese together. Blend in powdered sugar, vanilla and lemon juice. Set aside.
On a floured surface, roll out the dough to an 11 by 16-inch rectangle. Brush with melted butter and sprinkle with brown sugar. Evenly spread the sugared berries. Roll up starting from a short end, and slice into eight 2-inch pieces. Place in a buttered 9 by 9-inch pan, and bake for 35 to 40 minutes until golden brown and bubbly.
Drizzle with cream cheese frosting before serving.
