Sweet Berry Rolls

If your brunch doesn't have these sweet berry rolls, is it even brunch?

Ingredients

  • 1 frozen loaf of ready dough
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 1/2 cup chopped strawberries
  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • Cream cheese frosting:
  • 1/4 cup butter, cubed
  • 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • Topping:
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted

Steps

  1. Preheat oven to 350 degrees.
  2. In a greased loaf pan, allow the bread to rise for 1 to 2 hours.
  3. In a medium bowl, mix berries, sugar and cornstarch. Set aside.
  4. Cream butter and cream cheese together. Blend in powdered sugar, vanilla and lemon juice. Set aside.
  5. On a floured surface, roll out the dough to an 11 by 16-inch rectangle. Brush with melted butter and sprinkle with brown sugar. Evenly spread the sugared berries. Roll up starting from a short end, and slice into eight 2-inch pieces. Place in a buttered 9 by 9-inch pan, and bake for 35 to 40 minutes until golden brown and bubbly.
  6. Drizzle with cream cheese frosting before serving.
