Ingredients

Sauteed sweet plantains

  • 1 Sweet plantain
  • 1/2 cup Canola oil
  • 1/4 cup White sugar

Plantain Pancake

  • 1 cup Sweet plantain flour
  • 2 Eggs
  • 3/4 cup Milk
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • Cooking Spray

Steps

Sauteed sweet plantains

  1. Peel the sweet plantains. Diagonally cut plantains into 1/2-inch-thick slices.
  2. Heat canola oil in a nonstick skillet over medium-high heat.
  3. Sauté the sweet plantains until golden brown, around 3-4 minutes on each side.
  4. Remove from the skillet and place the sauteed plantains on a paper towel to drain the remaining oil.
  5. Sprinkle with sugar and use it to decorate.

Plantain Pancake

  1. In a mixing bowl, combine sweet plantain flour, baking powder, and salt.
  2. Add the eggs, previously beaten, and milk. Mix until batter is homogenized.
  3. Heat a nonstick skillet with oil spray over medium heat.
  4. Pour around 1/4 cup of batter on the skillet using the back of the spoon to spread batter into a round shape.
  5. Cook until the heated side easily separates from the skillet and has lightly browned.
  6. Flip carefully with a spatula and cook on the underside.
  7. Remove from the heat and place on a plate. Continue with more cooking spray and the remaining batter.
  8. Place the sauteed sweet plantains on top of the pancake tower and decorate with honey, whipped cream and caramelized pecans.
