Sweet Potato Toast With Almond Butter

A warm slice of sweet potato topped with sliced banana, dried cherries, cinnamon and a drizzle of honey will send you into sweet slumber.


  • 1 cup Greek yogurt
  • 3 tablespoons almond butter
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1 large sweet potato
  • 1/2 banana, sliced
  • Dried cherries
  • Sliced almonds
  • Honey
  • Ground cinnamon


  1. In a small bowl, combine yogurt, almond butter, honey and cinnamon. Set aside.
  2. Preheat toaster oven to 450 degrees. Thinly slice sweet potato vertically into 1/4-inch slices.
  3. Bake the slices at 450 degrees for 15 to 20 minutes until tender and golden brown, flipping once halfway through the cooking process.
  4. Spread a thin layer of the yogurt mixture on the toasted sweet potato, and top with sliced banana, dried cherries, almonds, a drizzle of honey and ground cinnamon.
