Teriyaki Chicken & Rice

You've got 99 problems, but dinner ain't one!

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh ginger
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 2 chicken breasts, cut into pieces
  • Salt
  • 2 cups rice, cooked
  • 1 tablespoon white vinegar
  • 1/4 cup honey
  • 1 cup chicken broth
  • 1 grated carrot
  • 1/2 cup soy sauce
  • Sesame seeds
  • Chopped green onion

Steps

  1. In a saute pan, add olive oil, garlic, ginger and peppers. Stir to combine, then add chicken and season with salt. Stir and cook for a few minutes until chicken is cooked through.
  2. Add the rice, vinegar, honey and chicken broth.
  3. Sprinkle in the shredded carrots and pour in the soy sauce. Cook uncovered for a few minutes.
  4. Serve garnished with sesame seeds and chopped green onion.
