Teriyaki Chicken & Rice

You've got 99 problems, but dinner ain't one!

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh ginger
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 2 chicken breasts, cut into pieces
  • Salt
  • 2 cups rice, cooked
  • 1 tablespoon white vinegar
  • 1/4 cup honey
  • 1 cup chicken broth
  • 1 grated carrot
  • 1/2 cup soy sauce
  • To garnish:
  • Sesame seeds
  • Chopped green onion

Steps

  1. In a saute pan, add olive oil, garlic, ginger and peppers. Stir to combine, then add chicken and season with salt. Stir and cook for a few minutes until chicken is cooked through. Add the rice, vinegar, honey and chicken broth. Sprinkle in the shredded carrots and pour in the soy sauce. Cook uncovered for a few minutes.
  2. Serve garnished with sesame seeds and chopped green onion.
