Teriyaki Chicken & Rice
You've got 99 problems, but dinner ain't one!
Ingredients
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh ginger
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 2 chicken breasts, cut into pieces
- Salt
- 2 cups rice, cooked
- 1 tablespoon white vinegar
- 1/4 cup honey
- 1 cup chicken broth
- 1 grated carrot
- 1/2 cup soy sauce
- Sesame seeds
- Chopped green onion
Steps
- In a saute pan, add olive oil, garlic, ginger and peppers. Stir to combine, then add chicken and season with salt. Stir and cook for a few minutes until chicken is cooked through.
- Add the rice, vinegar, honey and chicken broth.
- Sprinkle in the shredded carrots and pour in the soy sauce. Cook uncovered for a few minutes.
- Serve garnished with sesame seeds and chopped green onion.
