Teriyaki Chicken Meatballs

Ingredients

  • For teriyaki sauce:
  • 1 cup reduced sodium soy sauce
  • 1 cup mirin
  • 1/3 cup honey
  • 1/4 cup golden brown sugar
  • 1 tablespoon rice vinegar
  • For meatballs:
  • 2 pounds ground chicken
  • 1 cup panko breadcrumbs
  • 1 egg, lightly beaten
  • 3 green onions, white and light green parts, minced
  • 2 tablespoons grated fresh ginger
  • 1 tablespoon grated fresh garlic
  • 1 tablespoon finely chopped cilantro
  • 1 tablespoon soy sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon white pepper
  • 2 tablespoons vegetable oil
  • To serve:
  • White rice or noodles
  • 1 green onion, thinly sliced
  • Cilantro
  • 2 teaspoons toasted sesame seeds

Steps

  1. To make the teriyaki sauce: In a small sauce pot over medium heat, add the soy sauce, mirin, honey, brown sugar and rice vinegar. Whisk until combined and the sugar is dissolved. Raise the heat to medium-high. Bring to a boil then reduce to a simmer for 20 minutes until slightly thickened.
  2. To make the meatballs: In a large mixing bowl, combine the chicken, breadcrumbs, egg, green onions, ginger, garlic, cilantro, soy sauce, salt and pepper. Do not over mix. Spread the meat mixture evenly into the bottom tray of the meatball master and proceed according to manufacturer’s package instructions.
  3. Heat the vegetable oil in a large nonstick skillet over medium heat. Add the meatballs and cook for 3 to 5 minutes per side, rotating until evenly browned and thoroughly cooked, about 15 minutes. (To be sure, break one meatball open to check for doneness. There should be no pink.) Carefully tilt the pan and use a spoon to remove excess fat and oil.
  4. Spoon 1 cup of the teriyaki sauce into the pan with the meatballs. Stir to coat.
  5. Serve the meatballs over rice or with noodles. Drizzle additional teriyaki sauce on top, and garnish with green onions, cilantro and sesame seeds.
