Tex Mex Chili Dogs

Ingredients

  • 1 tablespoon olive oil

  • 1 pound ground beef

  • 3 cloves garlic, minced

  • 1 poblano pepper, seeded and diced

  • 1 jalapeno, seeded and diced

  • 1 medium onion, diced

  • 2 tablespoons chili powder

  • 1 tablespoon ground cumin

  • 1 teaspoon smoked paprika

  • Salt

  • 1 large can diced tomatoes

  • 1 can red kidney beans

  • 1 can pinto beans

  • Pico De gallo

  • 8 Hot dogs

  • 8 Hot dog buns

  • 1/2 cup Queso Fresco, crumbled

  • 1/2 cup pickled jalapeños

  • 1/2 cup Cilantro, chopped

Instructions

  1. Heat a large nonstick saucepan over medium-high heat. Brown the ground beef, drain and set aside.

  2. To the pan add the olive oil, garlic, peppers, onion, chili powder, cumin, paprika and salt. Cook, stirring occasionally, until the vegetables are tender, about 8 minutes. Add the beef, tomatoes and beans and bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, until the flavors are blended and the chili begins to thicken, about 1 hour.

  3. Boil or grill up the hotdogs and place in their respective bun. Top each dog with chilli, queso fresco, pico de gallo, some jalapeños and a bit of cilantro.

- All right, today we are making some gorgeous Tex-Mex chili dogs. I'm stoked because this is the perfect recipe for when you're layin' back, you're watching the game, you're rootin' for your team. Yeah, sports! Step number one, let's brown off our beef. So I just want to get it into our pan. And we're gonna brown it off. Perfect, now that that's done, I just want to set it aside. So let's use the same pot, I'm gonna go back in with a little bit of olive oil. Then I've got three cloves of minced garlic. And one onion minced, that's all goin' in. Now, I have got a poblano pepper and a jalapeno pepper. I'm gonna chop up each of these and get the seeds out of there. The next step, let's go in with some of our spices. I have got two tablespoons of chili powder, one tablespoon of cumin. I'm gonna do a little bit of this smoked paprika, it offers just like a real nice depth of flavor, I love it. Perfect and let's saute that off, just until the veg are nice and tender. And the last things to go in are some diced, canned tomatoes and I've some kidney beans and pinto beans. We're gonna get those all in there. Now, this has to cook and thicken for about an hour, but that's like nothing, that's like one episode of Orange is the New Black, so I'm gonna go do that while this happens and then I will assemble the hot dog, show you how to do it, show you all these great toppings, I'll be back. All right, we're back. So the chili is done, halfway through I added a little bit of water cause it was gettin' dry on me, but it looks amazing and it smells so good. So let me show you how to put one of these together. I've got glorious weenie buns, I grilled up a couple sausages so I'm gonna get one of our lovely sausages in here. Then I hit it with some of this chili, while it's still piping hot. Meat on meat on meat. That's what it's all about. These are some really cool toppings. They happen to be some of my favorite. I thought you might like them as well. I've got some queso fresco, which I'm just gonna pop on top. You could also use feta cheese, you could use cheddar cheese, anything would be delicious, just as long as it hits that hot chili. Then I want to spoon on some of this pico de gallo. Hit it with some of these pickled jalapenos, and then the last and final thing, I'm an herb girl, so I have got some fresh cilantro that I pop on top. Yeah, now give me that and a little squeeze of lime, I'm a happy lady. I will watch an entire football game and not complain. Oh yeah, oh my goodness, that chili. What'd I put in there? You know it's good when I was like, no I'm not really that hungry and then I took a bite and I was like, I'm eatin' two of these.
