Tex-Mex Chili Dogs

Enjoy loaded hot dogs for days by spicing up your usual meat on top of meat, Tex-Mex style.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 3 cloves garlic, minced
  • 1 poblano pepper, seeded and diced
  • 1 jalapeno, seeded and diced
  • 1 medium onion, diced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt
  • 1 large can diced tomatoes
  • 1 can red kidney beans
  • 1 can pinto beans
  • Pico De gallo
  • 8 Hot dogs
  • 8 Hot dog buns
  • 1/2 cup Queso Fresco, crumbled
  • 1/2 cup pickled jalapeños
  • 1/2 cup Cilantro, chopped

Steps

  1. Heat a large nonstick saucepan over medium-high heat. Brown the ground beef, drain and set aside.
  2. To the pan add the olive oil, garlic, peppers, onion, chili powder, cumin, paprika and salt. Cook, stirring occasionally, until the vegetables are tender, about 8 minutes.
  3. Add the beef, tomatoes and beans and bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, until the flavors are blended and the chili begins to thicken, about 1 hour.
  4. Boil or grill up the hotdogs and place in their respective bun. Top each dog with chilli, queso fresco, pico de gallo, some jalapeños and a bit of cilantro.
