Thai Corn Fritters

This is a thai version of the traditional Corn Fritters, called Tod Man Khao Pod.

Ingredients

  • Kernels from 4 ears of corn
  • 1 egg
  • 1 sliced red chili
  • 1 tablespoon of fresh ginger
  • 3 cloves of garlic
  • 2 teaspoons of fish sauce
  • 1 egg
  • 3/4 cup of rice flour
  • 1 teaspoon of chili powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of baking powder
  • 6 sliced kaffir lime leaves
  • 1/2 cup of fresh basil
  • Sweet Thai chili and coriander, for serving

Steps

  1. Put half the corn in a food processor with all the other ingredients, except for the herbs and sweet thai chili sauce. Blend well.
  2. Add the rest of the kernels to this mixed, along with the finely sliced herbs.
  3. Deep fry in 330F peanut oil. This should take about 5 minutes.
  4. Serve with sweet thai chili sauce and top with coriander.
