Thai Fried Boiled Eggs

Just when you thought you'd mastered eggs, we take them to the next level. Hard-boiled eggs made better, Thai style.

Ingredients

  • 4 pcs. Whole eggs, boiled
  • 3 pcs. Shallots, sliced
  • 2 tablespoons Tamarind paste
  • 1/2 tablespoon Fish sauce
  • 1/4 cup Red bell pepper, sliced
  • 1/3 cup Lime juice
  • 3 teaspoons Muscovado
  • 1/3 cup water
  • Coriander and Spring onions to garnish

Steps

  1. In a bowl, combine muscovado, fish sauce, tamarind paste, and a little water.
  2. Saute shallots in a pan. Remove when golden brown. In the same pan, add the tamarind paste mixture. Cook until nappe/sauce consistency.
  3. Fry boiled eggs in a pot of hot canola oil. Fry and turn until crust froms.
  4. Remove from the pot and blot excess oil with paper towels.
  5. Slice the eggs in half.
  6. Plate and top with the crispy shallots, bell pepper slices, and tamarind sauce and coriander and spring onions.
