Thai Watermelon Salad

Refreshing watermelon, cucumber and mint are complemented by spicy Sriracha, ginger and crunchy peanuts.


  • 1 medium watermelon (about 4 cups)
  • 1 cucumber
  • 1/2 cup fresh mint, chopped
  • 1/2 cup fresh basil, torn
  • 2 tablespoons fresh lime juice
  • 2 tablespoons orange juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sriracha
  • 1/2 teaspoon freshly grated ginger
  • 1/4 cup roasted peanuts, chopped


  1. Cut the watermelon in half, then using a melon baller, scoop out meat of melon into a large salad bowl.
  2. Slice the cucumber and add to the bowl, followed by the mint and basil.
  3. In a medium-sized bowl, whisk together the lime juice, orange juice, soy sauce, rice vinegar, Sriracha and ginger. Season with salt and pepper.
  4. Pour dressing over the salad and toss to combine. Top with peanuts and serve.
