Throwback: Julie's First Recipe

Julie is throwing it back to her first recipe with this simple, delicious dish.

Ingredients

  • Olive oil
  • 2 cloves garlic, minced
  • 1/2 medium onion, finely chopped
  • 1 tablespoon tomato paste
  • 28-ounce can of diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 teaspoons dried basil
  • Salt and pepper
  • 1/2 a package spaghetti
  • 1 egg, whisked
  • 1 cup mozzarella
  • 1 cup Parmesan

Steps

  1. Heat oil in a saucepan over medium heat. Add garlic and onion and sauté until fragrant. Add in tomato paste, diced tomatoes, oregano, thyme, basil, and salt and pepper and bring to a boil. Turn the heat down and simmer for 25 minutes until thickened.
  2. In a large pot of boiling salted water cook the spaghetti to package directions. Drain and add to a bowl along with the thickened sauce. Let cool slightly before adding the egg and half of the cheese. Mix to combine.
  3. Preheat oven to 350˚F
  4. Pour the spaghetti into a pie plate and top with the remaining cheese. Bake for 20 minutes and then place on broil to melt and brown the top layer of cheese.
