Just how does one eat this delectable sausage, bread and gravy dish?

Ingredients

  • 4 eggs
  • 1 1/4 cups milk
  • 1 cup flour
  • Salt
  • 1/2 cup butter
  • A splash of oil
  • 3 onions, sliced
  • 1 tablespoon flour
  • 1 teaspoon maple syrup
  • A pinch of salt
  • 3 whole sprigs of thyme, plus a few extra to garnish
  • 2 sprigs rosemary
  • 2 1/2 cups chicken stock
  • 5 sausages
  • Olive Oil

Steps

  1. It's best if the Yorkshire batter has time to rest so I like to make it the night before. In a bowl whisk the eggs and milk together, then whisk in the flour. Try to get rid of as many lumps as possible. Set aside in the fridge.
  2. To make the onion gravy add the butter and oil in a saucepan and melt over low heat, then add the onions and fry until they're an even dark colour, roughly 15 minutes.
  3. Stir in the flour, syrup, rosemary and thyme sprigs and add the stock. Simmer until the sauce reduces by half.
  4. Preheat the oven to 425. In a roasting dish add 1/4 inch of oil and place in the oven for 10 minutes to get hot.
  5. Next, in a separate pan, fry the sausages in a little oil until coloured. Remove the sausages and set aside.
  6. Remove the dish from the oven then carefully pour in the batter. Arrange the sausages in the batter and bake for 35-40 minutes until the batter is cooked.
  7. When ready to serve, sprinkle with thyme and serve with the onion gravy.
