Tofu Rice Bowl

Flavorful soft tofu on a bed of rice makes a simple yet delicious meal.


  • Green onions, chopped
  • Simmered tofu:
  • 1 block soft tofu
  • 1/4 onion
  • 25 milliliters sake
  • 25 milliliters soy sauce
  • 25 milliliters mirin
  • 100 milliliters water
  • 1 teaspoon instant dashi powder
  • Hoji tea rice:
  • 3/4 cup uncooked rice
  • 2 pinches salt
  • 150 grams prepared hoji tea


  1. Combine all ingredients for the simmered tofu into a saucepan and leave overnight in the refrigerator.
  2. Combine ingredients for the hoji rice in a pot and cook covered over medium heat until boiling. Turn heat down to low and let it sit for 10 minutes.
  3. Turn off the heat and keep covered for an additional 10 minutes.
  4. Put rice into a bowl and top with sliced onions, tofu, green onions and the remaining sauce.
