Tofu Scramble 3 Ways

For a vegetarian alternative to scrambled eggs, try these fried rice, avocado toast, and breakfast bowl tofu scrambles.

Ingredients

  • ½ block extra firm tofu
  • 1 tsp turmeric
  • Salt to taste
  • Oil
  • ¼ cup onion, diced
  • 1 garlic clove, minced
  • ¼ cup peas
  • ¼ cup carrots, diced
  • 2 cups cooked brown rice (day old is best)
  • ¼ cup scallions
  • 2 tbsp soy sauce
  • Salt & pepper to taste

Steps

  1. In a pan, heat oil and add crumbled tofu, turmeric and salt. Stir well and cook for 2-3 minutes. Set aside
  2. Add a little more oil, then saute onion and garlic. Add carrots and peas and stir. Once the carrots are tender, add cooked brown rice, soy sauce, scallions, salt and pepper.
  3. Stir in the tofu scramble and cook for a few more minutes.

  • Tofu scramble:
  • 1 block extra firm tofu, pat dried
  • 2 tbsp onion, diced
  • 2 garlic cloves, minced
  • ¼ cup red bell pepper, diced
  • 1 tsp turmeric
  • ½ tsp cumin
  • Salt and pepper
  • Oil for pan
  • Toppings:
  • ½ cup Roasted sweet potato cubes (seasoned with olive oil, paprika, salt & pepper)
  • ½ cup Sauteed kale (seasoned with olive oil, chili flakes, salt & pepper)
  • ½ cup Canned black beans, drained
  • Scallions

Steps

  1. In a pan, heat oil and add onion and garlic. Saute for a few minutes, and then add red bell pepper. Crumble in the tofu, sprinkle turmeric, cumin, salt, and pepper, and stir well.
  2. Serve with roasted sweet potato cubes, sauteed kale, black beans, and scallions.

  • 1 block extra firm tofu
  • 1 garlic clove, minced
  • Cherry tomatoes, sliced
  • Fresh basil
  • ½ tsp dried oregano
  • 1 tsp turmeric
  • Salt & pepper
  • Olive oil for pan
  • For the rest:
  • ½ ripe avocado
  • Toasted sliced bread

Steps

  1. In a pan, heat oil and add garlic. Once lightly browned, add crumbled tofu, turmeric, oregano, salt, and pepper and stir well. Turn off the heat and add tomatoes and basil.
  2. Serve on top of toast and ripe avocado slices.
