In a pan, heat oil and add crumbled tofu, turmeric and salt. Stir well and cook for 2-3 minutes. Set aside.
Add a little more oil, then saute onion and garlic. Add carrots and peas and stir. Once the carrots are tender, add cooked brown rice, soy sauce, scallions, salt and pepper. Stir in the tofu scramble and cook for a few more minutes.
