Tofu Scramble 3 Ways

For a vegetarian alternative to scrambled eggs, try these fried rice, avocado toast, and breakfast bowl tofu scrambles.

Ingredients

  • ½ block extra firm tofu
  • 1 tsp turmeric
  • Salt to taste
  • Oil
  • ¼ cup onion, diced
  • 1 garlic clove, minced
  • ¼ cup peas
  • ¼ cup carrots, diced
  • 2 cups cooked brown rice (day old is best)
  • ¼ cup scallions
  • 2 tbsp soy sauce
  • Salt & pepper to taste

Steps

  1. In a pan, heat oil and add crumbled tofu, turmeric and salt. Stir well and cook for 2-3 minutes. Set aside.
  2. Add a little more oil, then saute onion and garlic. Add carrots and peas and stir. Once the carrots are tender, add cooked brown rice, soy sauce, scallions, salt and pepper. Stir in the tofu scramble and cook for a few more minutes.
