Tropical Mini Tarts

With this mix of coconut, mango, and kiwi ... we're living on island time.

Ingredients

Coconut Crust

  • 1-2 large egg whites
  • 13/4 cups unsweetened shredded coconut
  • 1/4 cup sugar
  • 2 tablespoons unsalted butter, room temperature
  • 1/4 teaspoon kosher salt

Kiwi Filling

  • 2 Kiwis, peeled
  • 1 tablespoon natural greek yogurt
  • 1 teaspoon lime juice
  • 1 tablespoon honey

Mango Filling

  • 1 Mango, peeled and cut up
  • 1 tablespoon natural greek yogurt
  • 1 teaspoon lime juice
  • 1 tablespoon honey

Steps

Coconut Crust

  1. Preheat oven to 325°.
  2. Lightly grease a muffin tin or use muffin liners.
  3. Mix egg white, coconut, sugar, butter, and salt in a large bowl until evenly combined and the consistency of a stiff paste.
  4. Using your hands, press mixture evenly onto bottom and up sides of the muffin tins.
  5. Bake until edges are golden brown and bottom is set and just barely golden, 15-20 minutes. Let cool completely.

Kiwi Filling

  1. Blend each filling separately by combining the ingredients in a food processor and blend until smooth. Clean in between flavors.
  2. Fill each tart shell half with mango and half with kiwi and use a skewer or spoon to swirl.
