Truffle Daifuku Mochi

Deliciousness happens when you combine chocolate and a yummy Japanese treat.


  • 50 grams shiratamako flour (glutinous rice flour)
  • 1 tablespoon unsweetened cocoa
  • 1 tablespoon sugar
  • 50 grams water
  • 8 chocolate balls
  • Unsweetened cocoa for dusting


  1. In a bowl, combine shiratamako, sugar and water. Mix and knead until it forms a dough and the texture feels like an earlobe. Divide into 8 and mold into balls.
  2. Fill with a chocolate ball, making sure to mold the dough back into a ball.
  3. Put in boiling water and boil for 5 minutes.
  4. Drain on paper towels and dust with cocoa.
