Double-Fried French Fries

How do you get a fry that's perfectly crispy on the outside and chewy on the inside?


  • 2 russet potatoes
  • Salt, to taste


  1. Set fryer to 280 degrees.
  2. Peel the potatoes. On the thickest mandolin setting, slice the potatoes the long way.
  3. Reassemble the potatoes and use a knife to cut them into fries. (You're trying to make cuts the same width as the mandolin did in the previous step.)
  4. Soak fries in cold water for half an hour to remove starch.
  5. Rinse and drain the fries. Place them in the fryer for 2 1/2 minutes. Lift the basket, turn the heat up to 360 degrees, and lower them back in to cook for 2 to 3 minutes, or until golden.
  6. Remove fries to a mixing bowl. Toss with salt and serve.
