Ube & Cheese Pandesal

A different interpretation of the classic pandesal, this version is flavored with ube halaya and then stuffed with cheese and ube jam!

Ingredients

Dough

  • 1/2 kg all-purpose flour
  • 8 grams instant yeast
  • 40 grams sugar
  • 8 grams salt
  • 200 ml water
  • 2 eggs
  • 60 grams ube halaya
  • 10 grams ube flavor
  • 100 grams unsalted butter

Filling

  • 1/2 kg cheese, cut into cubes
  • 1/2 kg ube halaya
  • Fine breadcrumbs

Steps

Dough

  1. In a large bowl, combine flour, yeast, and sugar. Mix well. Dissolve salt in water and slowly mix into the flour mixture.
  2. Add eggs, halaya, and flavor. Knead until it forms into a dough. Knead in butter and continue for 8-12 minutes or until the dough is fully developed. Cover and rest for 30 minutes.

Filling

  1. Divide dough into 35g pieces and roll into balls. To assemble, flatten one dough ball leaving a slightly thicker middle. Place halaya and cheese on the middle and seal each opposite ends to form a ball. Roll in breadcrumbs. Arrange on a baking sheet. Repeat for the remaining dough and let it proof/rise for 45 minutes to 1 hour or until double in volume. 10 minutes before set time, preheat your oven to 350°F. Bake for 8-10 minutes or until bread is light and fully baked.
