Ube Funnel Cake

Try this fun, colorful twist on funnel cakes made with everyone's favorite purple yam, ube!

Ingredients

  • 1 ¼ cup milk
  • ¾ cup ube (purple yam) peeled, cooked, mashed
  • 1 egg
  • 1 tbsp sugar
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 2 tsp baking powder
  • Pinch of salt
  • Juice of 1 lemon
  • Shredded coconut
  • Powdered sugar

Steps

  1. In a bowl, combine egg, sugar, ube, and vanilla. In a separate bowl, combine flour, salt, and baking powder.
  2. Add the wet mixture into the flour mixture and mix until smooth.
  3. Heat oil to 350°F. Pour batter into a funnel and close the opening with your finger or funnel stopper.
  4. Release the batter from the funnel and pour batter into a circular motion, and then zig-zag to fill in the empty spaces and stop flow.
  5. Fry 3 to 4 at a time, until slightly puffed and golden on all sides.
  6. Remove, drain on a rack or paper towel, and sprinkle with powdered sugar and shredded coconut. Serve immediately.
