Uni Carbonara

Take your creamy noodles to the next level with sea urchin and roe.


  • 3 tablespoons uni (sea urchin)
  • 3 tablespoons cooked crab meat
  • 2 tablespoons ikura (salmon roe)
  • 1 package udon noodles
  • Uni sauce:
  • 2 tablespoons uni
  • 120 milliliters cream
  • 150 milliliters water
  • 3 tablespoons shiro dashi (dashi stock)
  • Green onions, chopped
  • Gold leaf (optional)


  1. Combine 2 tablespoons uni, cream, water and shiro dashi stock in a blender and mix until smooth.
  2. Cook udon noodles in a saucepan with water.
  3. Once noodles are done, drain and transfer to a serving bowl.
  4. Top with more fresh uni, crab meat, ikura, green onions and gold leaf.
