- 3 tablespoons uni (sea urchin)
- 3 tablespoons cooked crab meat
- 2 tablespoons ikura (salmon roe)
- 1 package udon noodles
- Uni sauce:
- 2 tablespoons uni
- 120 milliliters cream
- 150 milliliters water
- 3 tablespoons shiro dashi (dashi stock)
- Green onions, chopped
- Gold leaf (optional)
- Combine 2 tablespoons uni, cream, water and shiro dashi stock in a blender and mix until smooth.
- Cook udon noodles in a saucepan with water.
- Once noodles are done, drain and transfer to a serving bowl.
- Top with more fresh uni, crab meat, ikura, green onions and gold leaf.
