Unicorn Donuts

Marbled strawberry and vanilla bean batter donuts topped with frosting, marshmallows, sprinkles and more.

Ingredients

  • Strawberry batter:
  • 1 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/3 cup strawberry yogurt
  • 2 eggs
  • 3 tablespoons vegetable oil
  • 3 tablespoons buttermilk
  • 3-5 drops pink food coloring
  • Vanilla bean batter:
  • 1 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/3 cup vanilla bean yogurt
  • 2 eggs
  • 3 tablespoons vegetable oil
  • 3 tablespoons buttermilk
  • 1 teaspoon vanilla extract
  • Vanilla glaze:
  • 2 cups powdered sugar
  • 1/4 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1 pinch of salt
  • 2-3 drops pink/fuchsia/red food coloring
  • 1/2 cup sprinkles of your choice, for garnish
  • 1/3 cup freeze-dried strawberries, for garnish
  • 8-12 edible flowers, for garnish
  • 1/2 cup mini marshmallows, for garnish

Steps

  1. In a large bowl, whisk together all strawberry batter dry ingredients. In a medium bowl, whisk together all strawberry batter wet ingredients until fully incorporated. Pour wet ingredients into dry ingredients and whisk until smooth.
  2. In a separate large bowl, whisk together all vanilla bean batter dry ingredients. In a medium bowl, whisk together all vanilla bean wet ingredients until fully incorporated. Pour wet ingredients into dry ingredients and whisk until smooth.
  3. Preheat oven to 375°F. Spray donut baking pans with a non-stick baking spray.
  4. Spoon a bit of each of the batters into the molds, alternating colors, and fill to about 2/3 of the height of the mold. (If you fill your molds with too much batter your donuts will not have holes!) When all of the donut molds are filled, use a toothpick and swirl the batter in all directions to marble the strawberry and vanilla batters. Bake for 10-12 minutes, or until donuts have slightly browned and spring back to the touch. Let cool and move on to your glaze.
  5. Whisk powdered sugar, milk, vanilla and salt together until smooth. Place 2-3 drops of food coloring on the surface of your glaze. With a toothpick, swirl the food coloring but do not over-mix the colors. Dip cooled donuts in the swirled glaze, then decorate with your desired toppings!
