Unicorn Horns

We've harnessed all the majesty of a unicorn and channeled it into colorful, delicious pastries.

  • 250 grams plain flour, sifted
  • Pinch of salt
  • 150 grams unsalted butter cut into 1 centimeter pieces, softened slightly
  • 100 milliliters chilled water
  • 1/4 cup butter, melted
  • Sugar for coating
  • Gel food colouring:
  • Green
  • Blue
  • Yellow
  • Pink
  • Purple

  1. Combine the flour and salt in a large bowl. Add the butter and toss and coat in the flour. Sprinkle over the water and mix with a flat blade knife, using a cutting action, until coarse dough forms.
  2. Divide the dough into 5 smaller bowls and add a small amount of food colouring. Continue to cut in until the color is evenly distributed. Place each colour in the fridge when not using it.
  3. Shape each color into a ball and place on a lightly floured surface. Line each colour side by side and then wrap with plastic wrap and let chill in the refrigerator for 20 minutes.
  4. On a lightly floured surface, use a rolling pin to roll out the dough always away from you. Use a palette knife to keep the edges straight.
  5. Fold the bottom third over, then the top third over to form a parcel shape. Roll out and then repeat the folding process trying to keep the colors organized. Wrap in plastic and refrigerate for 20 minutes.
  6. Roll out once more and then slice into skinny rectangles and twist before placing on a baking sheet. Bake at 425 for 15 minutes.
  7. Once baked and cool to the touch, brush each twist with butter and then roll in sugar to finish.
